Ingredients

Black pepper30 g
Dried red chillies12 g
Cumin3 g
Dried curry leaves1 tbsp
Compounded asafoetida powder1/4 tsp

Use a 240 ml cup, 15 ml tablespoon and 5 ml teaspoon unless a quantity is given by weight.

Pilchar Bhurko

Dry-roast pepper, chillies and cumin separately over low heat; avoid scorching.
Warm dried curry leaves briefly until crisp, then cool all ingredients completely.
Pulse with compounded asafoetida into a coarse powder.
Cool and seal in a dry jar. Begin with 1/2 tsp per small pot of rasam.
