A roasted coriander-and-dal sambar powder with chillies and curry leaves.

Ingredients

Tick ingredients as you go.

Use a 240 ml cup, 15 ml tablespoon and 5 ml teaspoon unless a quantity is given by weight.

Let’s cook.

Dry-roast dals and chillies over low heat until the dals turn golden.
Roast coriander and fenugreek separately; then crisp the curry leaves and cumin.
Switch off; add turmeric and asafoetida. Spread everything out to cool completely.
Grind finely. Cool again before sealing in a dry airtight jar.
